At the heart of this blend is Ti Kuan Yin (鐵觀音 — Iron Goddess of Mercy), harvested fresh and roasted to approximately 75% oxidation. The charcoal roasting process deepens the flavour, smooths the edges, and gives this tea its signature toasty character.
